So I understand how it's easy to believe nonsense when you're brainwashed from birth, and how it can be comforting to believe your life is somehow very important in the grand scale of the universe, and how you don't have to be afraid of death because you'll go on to a better place where you'll live happily ever after for eternity. She cried when you proclaimed your love of goodness because, in part, it was a sign that you weren't broken and desperate for Mormonism. I would not have wanted to be dismissed as crazy and unworthy of attention when I was still a member, because it wouldn't have been true.

Not the end of the world. While it's true that Mormons are not one-dimensional and completely predictable, the odds of a successful relationship, given the OP's description of his girlfriend, are slim. Their values and the values of popular western culture are wildly disparate, which can be tough for them to navigate early in life. I wouldnt encourage my kids to date a mormon. I am married to an ongologist for 16years. Don't put them through that either.
I don't know how to manage the resentment. He isn't always around for holidays, birthdays, or anniversaries. Did he get kicked out of the church for marrying you. This is wonderful and in accordance with the desires of a loving Father in Heaven, but it can turn a marriage on its ear, if the spouse is unprepared. I'm pretty disturbed by the level of dismissiveness seen in many of the comments here.
He doted on me, and we had long skype conversations for the first few weeks. A Mormon wife will also want to bring the kids along, and that should be discussed and decided before marriage and before kids. I think she felt that it was important for me to understand the types of challenges in an interfaith marriage. I sacrificed a career and instead raise the children at home which often feels like single parenthood. You should want to keep things new and interesting, as you would in any relationship, while still allowing your date to maintain the standards of her faith. Many times, that is exactly what it really does feel like Yes I'am all to aware about those silly answers regarding pay and "don't worry be happy" boloney.
